Boz iç

Turkish pistachio kernels picked before full ripeness, when the kernel is at its greenest. The grade baklava and pastry makers ask for.

Boz iç is the kernel of pistachios picked three to four weeks ahead of the main harvest. A pistachio kernel loses its green as it ripens; picked early, it keeps a deep, vivid colour.

A purplish skin over bright green flesh. Supplied raw and shelled, it carries its colour into baklava, biscuits, chocolate and confectionery.
